This Mushroom Tagliatelle serves 4 people and is inspired by the earthy flavors of Tuscany, where mushrooms are a cornerstone of seasonal cuisine, yet it can easily grace tables anywhere in the world. Fresh tagliatelle, sautéed Tuscan mushrooms, a drizzle of golden olive oil, a touch of salt, and a bottle of crisp white wine to pour and share — a recipe that is both effortless and generous.

Ingredients (Serves 4)

  • 400 g fresh tagliatelle
  • 500 g Tuscan mushrooms (porcini, cremini, or chestnut mushrooms)
  • 3 tbsp extra-virgin olive oil
  • 2 garlic cloves, finely chopped
  • Salt, to taste
  • Freshly ground black pepper (optional)
  • A handful of fresh parsley, roughly chopped
  • 1 bottle of crisp white wine, to sip and share

Wine Pairing: Light, crisp white wine such as Pinot Grigio or Vermentino

Method / Instructions

1. Prepare the Mushrooms

Wipe the Tuscan mushrooms gently with a damp cloth and slice them evenly. Their earthy aroma, reminiscent of the forested hills of Tuscany, will fill the kitchen as they cook.

2. Cook the Pasta

Bring a large pot of salted water to a boil. Add the fresh tagliatelle and cook for 2–3 minutes, just until tender. Reserve a small cup of pasta water before draining.

3. Sauté the Mushrooms

Warm the olive oil in a skillet over medium heat. Add the garlic and let it soften, releasing its fragrance. Add the mushrooms, season lightly with salt, and cook until golden and tender, about 5–7 minutes.

4. Bring It Together

Add the drained pasta to the skillet. Toss gently with the mushrooms, adding a splash of reserved pasta water to create a silky coating. Season to taste with salt and black pepper.

5. To Serve

Sprinkle with parsley, pour the wine, and gather everyone at the table. Serve immediately, while the pasta is warm and the aroma still lingers in the kitchen.
